Crab Fried Rice
Filled with pantry staples, but taken to another level by meaty crab and the tangy sweet and sour sauce that goes on top!
Ingredients
For the rice:
1 bunch scallions, sliced
1 knob ginger, chopped
2 garlic cloves, chopped
1 1/2 cup mushrooms, chopped
4-6 cups cooked jasmine rice
1-2 eggs, whisked
2 cups crab meat
1 tablespoon fish sauce
2 tablespoons soy sauce
For the sauce:
2 tablespoons fish sauce
2 tablespoons lime juice
1 teaspoon sugar
1 garlic clove, chopped
1 tablespoon chopped chilli of choice!
Instructions
Step 1
Fry all your aromatics in a neutral oil, over high heat, for a minute or two, then add the mushrooms. Sauté well to get lots of good colour and then add your rice, making sure to break it apart with your hands. Stir fry well, DO NOT SMASH THE RICE. Once your rice is coated in oil and sizzling, add the egg around the pan, let it cook and then toss into the rice. Add the crab and sauces. Combining gently. Garnish with more scallions and cilantro if you have it.
Step 2
Combine all the ingredients of the sauce in a small bowl, and stir well to dissolve the sugar. Add spoonfuls to your bowls of rice before you serve! And enjoy! ✨
