Hummus
Hummus is so simple to make, you’ll never buy it from the store again.
Some key tips:
If you boil your chickpeas yourself, the hummus will be even creamier.
Make sure to stir your tahini before adding it. And be generous with it. The nuttiness from the sesame is so good. And you don’t need a lot of olive oil. Just to move things along and emulsify the hummus.
Ingredients
1 can chickpeas
2-3 heaping tablespoons tahini
Juice of 1-2 lemons
Salt to taste
1 garlic clove, grated
1 teaspoon zataar
1/4 plus more good-quality olive oil
Instructions
Step 1
Add the chickpeas, tahini, lemons, garlic, salt and zataar to a food processor and process together for a minute. Slowly add the olive oil, and process until the hummus is creamy and fluffy. Adding more salt and lemon until bright and balanced. Serve with fresh crudite or as an addition to your kebabs, pita, and your mezze.
